Freezing temperatures will rupture the plant's cell walls. So, high latitude/high altitude plants have emerged over time as having thicker cell walls. Some even generate heat in their petals and reproductive organs!

However, other plants from tropical areas would have difficulty performing photosynthesis if their cell walls were too thick so they emerged over time as having thin cell walls.
