Vegetables contain a very high quantity of water. When they are cooked, the water expands due to heating and is lost by evaporation. Since water provides bulk and volume to the cells, the vegetable looks smaller after cooking. Because leafy vegetables contain chlorophyll and water in its fibre. Which get evaporated after being cooked. Hence loss in quantity of vegetables.
