I would say that the prairies are ideal for cattle rearing because they often exhibit grasslands which is ideal fodder for cattle. As for agriculture, prairies are usually flat areas so are relatively easy to cultivate and being flat their soil may have developed better than say on a mountainside where erosion is more of a problem.
