Answer:

1.Material having low specific heat value will be used as the base of cooking vessel so from small amount of heat it  can spread the heat over all container through conduction. That's why we used copper as it has low specific heat value.

2.A coolant is a material that can easily reduce or regulate temperature so material having high specific constant here water will be used as coolant.
