Well, kabir used more than one dialect in his poems. His saakhees (originated from word sakshi means witness) have words from hindi, punjabi, brijbhasha, avdhi, rajsthani etc. In hindi literature, the language he used, is known as 'Panchmel Khichdi ( a mixture of five language)'.
