This paragraph is all about different type of disease.It is saying that pathogens or biological 8nfectious agent are disease carrying microorganisms which can infect human body easily. They produce toxins in our bodies during incubation period. Here incubation period means the first stage of any infectious disease when we see or realise its first symptoms. So,these pathogens by producing toxins in our bodies they effect our immune system and so are able affect our bodies.These microorganisms includes worms like bacteria, fungi, helminthes,etc. and belong to a number to taxonomic categories (I expect you would have read chapter "Diversity in living beings") .At last he is simply saying that bacteria belongs to phylum monera and protozoa to protista so they are unicellular organisms whereas helminthes are multicellular organisms.
If you don't know about these phylum or name of given organisms then you can simply assume them as worms which are either multicellular or unicellular organisms.
You an also read the chapter "Diversity in living beings -9" for better understanding.
