Semiya payasam or vermicelli payasam [desert]
1. heat a heavy bottom pan with 1 tablespoon of ghee.
2. add some cashews and saute them till light brown.
3. next add 1- 2 tablespoons of raisins to the pan.
4. saute till they turn plump.[raisins]
5. now, remove this to a plate and keem them aside.
6. now add another tablespoon of ghee and add vermicelli.
7. roast them till light golden on medium flame.
8. pour 4 cups of milk to the pot.
9. bring the milk to boil on low flame. stir and make sure there's no lumps.
10. cook till vermicelli is fully soft cooked. keep stiring to prevent burning.
11. now add 1/2 cup of sugar and cook on low heat till the vermicelli turns thick.
12. next add 1/2 teaspoon of cardamom powder. remove from heat when its of a thick poring consistency.
13. semiya payasam will thicken upon cooling
14. garnish with nuts n raisins and serve.
