Clean milk production

Contamination can occur during and after milking. So it is necessary to clean and disinfect the contact surfaces and equipment associated with the milking process. The objective of clean milk production can be achieved by the practical application of a science based system like Hazard Analysis Critical Control Point.

Procurement of milk

Millions of rural milk producers earn a living through dairying.  They occupy a major place in India's milk production system. Organized dairies procure the milk from them.

Dairy cooperative

A dairy cooperative is a business that is owned and controlled by the dairy farmers. They produce the milk used by the cooperative.

The functions of dairy cooperative society can be classified into two categories.  They are : Managerial and Operational.

The dairy cooperative is formed by the milk producers of a village. They buy a “minimum of one share” and pay an entrance fee as stated by the by-laws.  These members have the supreme powers which are subject to the “State Cooperative Act, Rules and by-laws.”

Operational

The society’s major operations can be classified in two groups: milk trading and providing input services.

Milk trading involves receiving, testing and collecting the sample of milk sold, despatch of milk to the milk union, payments distribution and maintaining the accounts. Input services include animal health coverage, breeding, supply of cattle feed, fodder development, clean milk production and extension services to producer members.

Every owner of the cow will bring the milk in a stainless steel container to the collection centre.  A sample of it is tested and then the entire milk is collected in stainless steel (AISI 304).  It is then weighed without foam and entered in the passbook of the person who delivers the milk and in the purchase register which are maintained by the society

Cleanliness:

As milk is easily perishable, cleanliness and sanitation goes hand in hand.  There should be adequate lighting facility, drainage facility, cow sheds etc.

Feeding and water should be given in a clean place. Milk parlors should be regularly cleaned.  Proper Ventilation should be provided. Disinfecting the houses and the cow-sheds should be done periodically.

The hairs which are present in the hind legs should be cleaned.  The cows should be given regular feeding and medical checkup.

Functions of a Dairy Cooperative Society (DCS)

The functions of a dairy cooperative society can be listed as follows:

1) They have to collect milk from the farmers twice a day

a)      Cattle feed should be given in the correct quantity.

b)      Improved variety of fodder seeds have to be supplied.
