Produced in salivary glands, saliva is 98% water, but it contains many important substances, including electrolytes, mucus, antibacterial compounds and various enzymes. The digestive functions of saliva include moistening food, and helping to create a food bolus, so it can be swallowed easily.



HCl also has another important role to play in the stomach during the digestion process. The presence ofHCl in the body of the stomach causes the activation of enzymes. One of the proteins in HCl is used to convert the enzyme pepsinogen into pepsin. Pepsin breaks up the peptides from the protein.
