In air: Wind can increase or decrease the speed, and can even push sound waves sideways. Air density affects it. Temperature, pressure, humidity and gas mixture can each affect the density.

In liquid: The speed of sound is affected by density and viscosity. These in turn are affected by temperature, pressure, composition and currents (as with wind).

In solid: Consider a long cylindrical bar. The speed of sound waves traveling lengthwise is influenced by the density and flexibility of the material. These are affected by the composition of the material, the temperature, the crystalline structure if any, and any compression or tension in the material. Certain exotic materials such as piezoelectric materials have complex behavior.

In all of the above media, a shockwave can travel at a different speed than a normal (linear) wave, because the density of the material is briefly altered by the wave itself.
