In animal cells, it’s due to the physics of the cell membrane that give them a circular shape. The phospholipid bilayer that makes up the membrane has one end that is hydrophobic (it repels water) and one that is hydrophilic (it’s attracted to water). By the physics of that, this membrane will automatically form a circle to enclose the hydrophobic layer.
