Maltose is used as inducer for Pullulanase.

Maltose is also known as malt and made up of two alpha D- glucose unit.

Maltose degrade pullulan and has the potential for industrial applications. This is produced as an extra cellular enzyme by gram negative bacteria.

Maltose is an intermediate sugar formed by an action of Amylase catalyzed hydrolysis of starch. During germination of seeds, Maltose is synthesized by the Amylase which hydrolyze starch to disaccharide for the new plant.

Uses of Maltose

  • It helps in reaction to take place in living organisms.
  • Used in malting of barley from which malt beer is formed.
  • Used extensively in Alcohol production.
