Mansi observes that in winter, her mother warms the milk slightly before adding a little curd to set it. But in summer her mother uses milk at room temperature for setting curd. How would you explain this to mansi

this is because Curd is formed when microorganisms grows in it. microorganisms need warm and moisture to grow .. so, the milk already holds moisture in it and we have only to give it warmth .. therefore in summer it can be prepared in room temperature and in winter a spoon full of curd is added to warm milk..

Curd iss formed due to multiplication of Bacteria. The growth and multiplication of Bacteria is directly affected by cold temperature the growth of bacteria get limited. That is why milks needs to be heated before setting aside for curd formation. It is not necessary in summer when the ambiant temperature is conductive to the growth of bacteria.
