mature RBCs lack nucleus and other organelles so as to increase its oxygen carrying capacity. Its premature stage had a nucleus but during maturation it lost it.Rbcs are able to carry more oxygen due to the lack of nucleus thereby making it more efficient. after losing the nucleus,it is able to assume a biconcave disc shape to increase surface area and thereby increasing oxygen carrying capacity

Mature RBC lack nucleus. It is an adaptation of RBC to increase its surface area(for storing more oxygen) and flexibility so as to move through very fine capillaries.
They lack mitochondria so that RBC will not use the oxygen for itself.i.e for aerobic respiration.Hence they do anaerobic respiration.
Both are adaptations made by body itself to increase the effectiveness of transport of oxygen.
But the premature RBC has both these structures.
