Bruce Williams has a pretty decent answer here. I would add to that with some thoughts of my own.
To begin with, there are so many types of percussion instruments, that the answer to your question is possibly going to fill a book, but it boils down to the simple fact that whatever you hit with a hand / mallet / stick / rod) will make a sound based on the surface that is struck (surface area, depth of air column under that surface, surface type/construction, surface density) and the way it was struck (a hand slap on a djembe wil sound much different than a soft mallet on the same djembe, a snare drum struck with a stick sounds different than when struck with a brush), as well as where on that surface it is struck (a djembe struck with a palm in the center will give a “doum” sound, yet strike at the edge with only the fingers and you can get a “tac” sound; a bell struck at the open end has a different, lower resonant pitch than the higher, tinny pitch you get when struck at the closed end).
