Answer:

In short :-

Our digestive systems don't have the necessary enzymes to digest cellulose, which is a major component in grass. Hence we cannot digest grass. But we have the enzymes to digest the proteins, carbohydrates and fats in meat. So humans can digest meat more easily.

Meat can be easily digested by humans due to the presence of hydrochloric acid and other digestive enzymes in the stomach which are able to break down the meat.

Previously, about thousands of years ago, when the humans evolved, the ancient humans did consume grass, along with fruits, meat and various other things. Grass contains cellulose, a substance present in plant parts, that is quite difficult to digest. This is the reason why ruminants like cow chew it continuously in order to simplify the compounds present in it. According to a proposed theory by scientists, the appendix present in the human digestive system was used to break down cellulose, since ancient humans consumed grass as a part of their food. Since the consumption of grass been stopped after the civilization of humans occurred, the digestive system has lost its ability of digesting grass and hence, today the grass passes through the digestive system undigested.
