Meena’s mother brought leafy vegetables ‘Amaranth (Laal Math)’ from market. Meena helped mother to wash the leaves and cut it into small pieces. Meena observed that the water dripping from chopped pieces was red in colour. She asked her teacher about this red pigment and got to know that it is called ‘Anthocyanin’. Teacher asked Meena to perform a small activity. As suggested by teacher, Meena crushed a small leaf of Amaranth in her elder sister’s ‘nail paint remover’ solution. To her surprise, the juice extracted was green coloured! Teacher told that these are chlorophyll pigments. Meena started wondering what happened to anthocyanins? Why the extract is not red coloured
