Usually salts are added to kulfies just to make it remain solid for hours. Salts when added kulfies it turns sour so it is added to the ice cubes around to it. Also salt helps to maintain a constant temperature of ice cubes. This is how the property of reduction of melting point of water is used in preparing kulfies.
