Measuring the mass of stars in binary system is easy. Binary systems are sets of two or more stars in orbit about each other. By measuring the size of the orbit, the star's orbital speeds and their orbital periods, we can determine exactly what the masses of the stars are.
The only way we can measure a planet's mass is through it's gravity. This has been the way Earth's mass was measured too. Since, no human ever visited other planets and measured their gravity on the spot, we usually have to resort to other methods. The most commonly used technique is to observe a body orbiting or passing close to the planet and see how its path is effected by the planet's gravity.
