When shooting stars or meteorites come in the contact of our atmosphere, the friction of the atmospheric air causes the meteoroid to burn and hence catches fire. The intense heat of the burning meteoroid turns the air surrounded by it to change into the 5th state of matter i.e, plasma, this plasma is seen by us when it falls to the earth.
