There are two means of canned food spoilage

- Non-microbial  

- Microbial

Spoilage of canned food results due to the acidity of food content. The spoilage of food happens due to multiple reasons such as inadequate cooling after heating, less heating application etc.  

Anaerobic spoilage of canned food and vegetables is caused by anaerobic bacteria such as Thermoanerobicbcter and Thermoanaerobacterium. These bacteria cause the spoilage of food and produces large quantities of hydrogen and carbon dioxide.

Moreover, the most common spoilage of canned food is Hydrogen swelling.
