Yeast is a microorganism used in the preparation of bread and cakes.

  • Yeasts are eukaryotic and single-celled microorganisms which are classified as members of the fungus kingdom. The first yeast emerged hundreds of millions of years ago, and at least 1,500 species are presently identified. They are tallied to comprise 1% of all defined fungal species.

  • Yeast is essentially used in bread and cakes for rising bread and cakes because it produces carbon dioxide, stimulates alcohol that evaporates as the bread bakes, and boosts the development and strengthens the gluten network. Because of the limited availability of the yeast which is used in cakes, many bakers do substitute dry yeast in the place of cake yeast even in their ancestral family recipes.
