Formation of Lactic Acid

Explanation:

If pH < 7 it is known as an acidic solution.

If pH > 7 it is known as the basic solution.

  • Natural pH of milk = 6.6 to 6.8, it is near neutral pH of seven. This pH technically is not acid scale, acids are known to be sour
  • However, due to the growth of lactobacillus bacteria in the milk lactose present in it starts converting to lactic acid and thus the pH starts dropping
  • As the pH drops down it makes the milk more acidic
