Based on the quantity of nutrient present in the food, it can be categorised. For example, butter contains both carbohydrate and fat. But fat is present in a many times more of the quantity than the carbohydrate, So, butter is a fat. Similarly, even pulses contain carbohydrate, but the amount of protein is much larger than carbohydrate. So, ultimately, pulses are proteins.
One other way of categorising food is according to their calorific value.
