When a strong sugar or salt solution is put on the peel of the mounted rheo leaf, and waited for a minute, the observation made under a microscope will be that the leaf has shrunken.

The main principle behind this reaction is osmosis. Osmosis can be defined as the process in which "solvent molecules" move from a region of "higher concentration" to the "lower concentration" through a semi-permeable membrane. In case of the mounted rheo leaf, in which a strong solution of sugar or salt was put, the sugar/ salt solution being hypertonic (i.e. having "higher concentration of solute" molecules than solvent molecules), will cause the water from inside of the leaf to come out as per the principle of osmosis, across the semipermeable cell membrane, and thus it shrinks.
