Red and White Muscle. Certainmuscles of the carcass are particularly dark or red. This color difference is caused by a red pigment, myoglobin, in the sarcoplasm (cytoplasm) of musclefibers. Hemoglobin, the pigment of redblood cells, brings oxygen to capillaries on the muscle fiber surface
