Not gonna lie but I am a little confused by the question.

If you're talking about exchange in body substances, I'd say 1) Oxygen (from the nose to the lungs)

2)Carbon Dioxide (from the lungs to the nose)

3)Water

4)Nutrients (includes proteins, minerals,etc)

I can't think of any more 'substances' as yoube said but I hope the above 4 answers satisfy your question.

edit : Digested waste may be a another one but I'm not sure.
