Cellulase is the enzyme secreted by microbes in animals to digest cellulose. We humans cannot digest cellulose because We aren't herbivores: our omnivore diet doesn't need the cellulose. We instead get it from other sources.The enzyme that digests cellulose is mainly found in herbivores because their diet consists entirely of plant, which contains cellulose. All humans are omnivores, thus, due to evolution, we can't digest cellulose because we don't need to.
