Bacteria lactobacilli anaerobically work on the lactose and break it to form lactic acid.
This lactic acid makes the milk fall from pH scale of 7 to less than 5.
Substances which have pH scale less than 7 are acidic in nature.
Thus, it is lactic acid which makes milk sour in taste.
