Baking powder contains sodium hydrogen carbonate and a mild edible acid like tartaric acid or citric acid. NAHCO3(sodium bicarbonate) + H(hydrogen ion of any mild edible acid) ———CO2(carbon dioxide) + H2O(water) + SODIUM SALT OF ACID. Carbon dioxide bubbles out causing the bread/cake/cookie to rise.
