Water is a liquid, and liquids have fixed volume but not fixed shape. They take the shape of the container in which they are kept. This is why water takes the shape of vessel in which it is poured.

Water is liquid and being liquid its molecules has less weak intermolecular force of attraction, due to which water take the shape of the vessel in which it is poured.
