Carbohydrates are one of the simplest chemical structures. They are made from atoms of carbon, hydrogen and oxygen. They are used by carbon based lifeforms as a source of energy.

They can be so called “simple carbohydrates” as:

• glucose

• fructose

• maltose

• galactose

• lactose ( disaccharide made from glucose and galactose )

• saccharose ( disaccharide made from glucose and fructose )

And they are so called “complex carbohydrates” among which only starch ( polymers of glucose ) is digestible by humans. The rest are called “fibers” like cellulose, chitin, pectins etc. We usually recognise 2 major types of fibers in diet: soluble and insoluble in water. Fiber structures are like “sceletons” for plants. Fiber keeps their structure “in place”.
