Ptyalin is the enzyme present in human Saliva.

The food as soon as ingested into the mouth, the enzyme called Ptyalin is secreted by the salivary gland. As the food is composed of many nutrients which are complex in nature, it must be digested into simpler forms such that they are digested by our digestive system.

In mouth, ptyalin or salivary amylase, digests complex starch present in the food into simpler forms such as disaccharides and is sent into stomach through esophagus.
