The enzyme invertase is responsible for the hydrolysis of sucrose into glucose and fructose.
It is nothing but the breaking down of the sugar.
The sugar in the blood should always be maintained and if it increases then insulin is taken to bring it back to the average level.
Through the insulin hormone, the cells get sugar from the blood they are energized.
