During fermentation anaerobic organisms like yeast breakdown glucose in absence of oxygen to give carbon dioxide.

The equation is as follows.
The glucose is first converted from a 6 carbon molecule to a 3 carbon molecule.

Then the 3 carbon molecule is converted to ethanol and carbon dioxide.

In overall the equation is as follows.

C6H12OH -----> C2H5OH + CO2.
