The Italian bee variety, which is used for the production of honey is Apis mellifera. It is also known as European honey bee or western honey bee and is the most common of the seven to twelve species of honey bee found globally. Like all the honey bees, the European honey bee is eusocial, that is producing colonies with a solitary fertile female, various non-reproductive females or workers, and small ratio of fertile males, known as drones.
The bees of this species are preferred over other varieties because these species are known for their high concentration of honey gathering, as well as, they sting less, and can remain in the beehive for a longer duration.
