Oil and water don't mix. so the mixture will separate into 2 layers. Cooking oil is less dense than water and will float on top fo the water and can be carefully poured off. This is called decanting. To get a better separation chemists uses a separating funnel. This is a glass funnel similar to a filter funnel but it has a tap at the bottom. When the tap is opened the lower layer can be run off first.
