THE MAIN YEAST SPECIES USED IS SACCHAROMYCES CEREVISIAE. IT PAYMENTS DOES SUGAR, COMING FROM DIFFERENT SOURCES, E.G. , GRAPES FOR WINE , BARLEY FOR BEER , TO ALCOHOL AND CARBON DIOXIDE. BOTH WILD AND CULTIVATED STRAINS ARE USED.
