The phenomenon is Evaporation.Earthen pot contains many pores. In an earthen pot, the water (in small amounts) gets evaporated quickly through the pores. Some heat energy is utilised during the process of evaporation.Since the required heat energy is taked from the water itself,it leads to a lowering of temperature in the remaining amount of water.
Evaporation makes the air around the pot wet and cool.Therefore the air around also get cool.
