The process is termed as collapsing. When the one clicks on the (-) sign in a list on a panel in a computer, the branches within the root folder are compressed such that only the root folder is visible and has a (+) sign on it.
The opposite of this is expanding, where you click the (+) sign and the branches in the root folder line up and are visible while the root folder obtains a (-) sign in case you want to collapse it again.
