Lingual lipase starts the digestion of the lipids/fats. Salivary amylase: Carbohydrate digestion also initiates in the mouth. Amylase, produced by the salivary glands, breaks complex carbohydrates to smaller chains, or even simple sugars. It is sometimes referred to as ptyalin.

Salivary gland produces enzyme known as salivary amylase ....The saliva contains salivary enzyme that brakes down starch which is a complex molecule to give sugar..The food is mixed completely with saliva and moved around the mouth while chewing by the muscular tongue
