taq polymerase enzyme is extracted from thermus aqaticus bacteria. This enzyme is thermally stable as the bacteria lives in high temperatures.
During PCR, high temperatures are required for the denaturation of DNA. under such high temperatures, the normal enzymes will also get denatured but not taq polymerase as it is stable under high temperatures.
This removes our need for adding enzyme every time after one cycle.
