ucrose is converted into ethanol by using the process called biochemical process
The process includes two steps. 

 • Glycolysis is the first step in which the glucose molecules get broken down into a couple of pyruvate molecules and this process is catalyzed by Pyruvate decarboxylase. 

 • The second step is catalyzed by alcohol dehydrogenase.

Thus, the two catalysts in the conversion of sucrose into ethanol are Pyruvate decarboxylase and alcohol dehydrogenase.
