Knob is struck for the chemical reaction to take place. The bottle breaks and sulphuric acid reacts with sodium bicarbonate. Due to this reaction, carbon-dioxide is produced. It forms a blanket around the fire, cutting off the air supply, due to which the fire gets extinguished.
