Sodium and Potassium react violently when put in cold water.
Small explosions take place on the surface of the metal and sparks flow out. A huge amount of hydrogen gas is realeased. The piece of metal in the cold water moves around at a high rate.
To identify the gass evolved, a lighted candle must be held up near the gas. If there are pops taking place when the gas reaches the light of the candle, then we know that hydrogen gas is evolved.
