Why are radishes, carrots, beetroots, and sweet potatoes thick, fleshy and bulging? Which part of the plant do they form?

THESE ALL ARE THE STEM PART OF THE PLANTS THESE PARTS ARE USED BY THE PLANTS TO STORE THEIR FOOD .THE FOOD PREPARED BY THE PLANT IS MOSTLY IN THEN FORM OF STARCH ,SO THE EXTRA STARCH IS STORED IN THESE PARTS OF THE PLANT,THIS CAUSES THEM TO BULGE AND SWELL.
