A neuron's function is heavily dependent on its structure. The structure of the dendrites and axon of a neuron are maintained by a scaffolding of microtubules. When a cell undergoes mitosis, the microtubules break apart and turn into the mitotic spindle. A mature neuron would be rendered nonfunctional if it lost its shape, and it would absolutely lose its shape if it trief to divide, so once a neuron matures it can't divide.
