Nitrogen gas is filled with airtight packets of potato wafers, because

  • Potato wafers are made of several oils and fats. On coming in contact with atmospheric oxygen these fats and oils gets oxidised and degrade the food quality. This is termed as rancidity.
  • In order to avoid rancidity in wafer packets nitrogen gas is used. Nitrogen gas is unreactive and inert in nature because of its strong triple bonding.
  • So, these packets are filled with nitrogen gas to prevent oxidation of fats and oils.
