Answer:nitrogen is an inert gas and doesn't react with oil and fats. whereas oxygen reacts with food then makes rancid. so, the bags is used to packing the food items with nitrogen gas to remove the oxygen inside the bag. because when oxygen is not present inside the packet rancidity of food items is avoided.
