Turning of milk into curd is a chemical change, because in this process a new substance is formed that is curd. The lactose sugar of milk gets converted to lactic acid to form curd.

When we burn a piece of wood, it gets converted into ashes and thus a new substance is formed.

However, when we cut a piece of wood. It's pieces remain wood even after cutting. Here no new substance has been formed.
